Our Story
About Brooki Bakehouse
Brooki Bakehouse is an Australian bakery known for thick, gooey, bakery-style cookies. We opened in Brisbane in May 2022 in a 41-square-metre kitchen on Marshall Street, Fortitude Valley. Today we bake across Australia and the United Arab Emirates, ship cookies Australia-wide, and are opening soon in the The United Kingdom.
We are still family-owned. Brooke and Justice Bellamy own the business, and Brooke is in the kitchen most days.
Growing up
We grew to a team of 10 and moved cookie dough production to an external kitchen, which we outgrew in under a year. Managing a storefront and an e-commerce business that were both growing at once was a genuine juggle, so we hired, and hired again.
At the same time we were getting ready to welcome our first baby, who arrived on the same day we opened our second store at Brisbane Airport. Talk about timing.
Today more than 200 people work at Brooki across Australia and the UAE — bakers, cake decorators, customer service, warehouse and logistics. Fair to say we've grown up!

We have bakeries and kiosks across Australia, including our Brisbane home in Fortitude Valley, South Brisbane, the Gold Coast and Melbourne, our Sydney flagship at Barangaroo, and stores inside Brisbane, Gold Coast, Sydney, Adelaide and Perth airports.

How it started
How it started
The first Brooki kitchen was 41 square metres. That's smaller than a lot of people's living rooms, and it held the ovens, the benches, the cool room and us.
The early days were endless cookie dough testing — small batches, a lot of trial and error, a lot of things that didn't work. We made all sorts in that kitchen, but it was the cookies that people kept coming back for. Thick, generously filled, still soft in the middle. They became our best seller within months and they've never stopped being it.
How people found us
How people found us
After a slow and steady start, Brooke began filming behind-the-scenes videos — "a day in my life" as a bakery owner. Not the polished version: the 4am starts, the dough scales, the trays going in and out.
People were fascinated by the ins and outs of running a bakery, and before long they were turning up at the door to try the cookies for themselves. The queue on Marshall Street became a regular thing. Those videos now reach millions of people a week across TikTok, Instagram and YouTube, and they are still filmed in our own kitchens.

Alongside them: brownies, cakes made to order, celebration cakes, and a rotating list of things we're testing. Our online store ships cookies across Australia, and selected products are available for international delivery.
We also make Brooki available in places a bakery normally isn't. Our vending machines put fresh cookies in front of people at hours no bakery is open.

Bake with Brooki is Brooke's cookbook — 100 recipes, written and photographed by Brooke, published by DK. It became a bestseller in Australia and is now published internationally.
